Amuse:

Oyster mushroom, smoked garlic, tarragon

Starter:

Smoked eel, duck ham, beetroot, apple, nasturtium

Main:

1^st serving:

Venison ragout, kohlrabi “pasta”

2^nd serving:

Venison saddle, blood carrot, watercress, blackberry

Pre dessert:

Brown butter, apricot, rum

Dessert:

South Durham honey, castle garden squash, cold pressed rapeseed oil

Macaroons –

Sour apple & salted caramel
